Ingredients · serves 1

  • 200 g cod fillet
  • 180 g pak choi
  • 120 g mushrooms
  • 100 ml light coconut milk
  • 300 ml reduced-salt vegetable stock
  • 1 tsp red curry paste
  • 1 tbsp lime juice

Step by step

Method

    Wash and slice the pak choi and mushrooms.

  2. 2

    Bring the stock, coconut milk and curry paste to the boil and cook the mushrooms for 5 minutes.

  3. 3

    Pat the cod dry, dice it and gently poach it with the pak choi for 6–8 minutes without vigorous stirring.

    Check that the fish is opaque throughout, stir in the lime juice and serve immediately.
