- 150 g plain tofu
- 120 g cooked soba noodles
- 120 g cooked edamame
- 120 g cucumber
- 30 g spring onion
- 20 ml rice vinegar
- 15 ml reduced-salt soy sauce
- 8 g sesame oil
- 5 g sesame seeds
Step by step
Method

Pat the tofu dry, dice it and brown it on all sides in a non-stick pan for 6–8 minutes.

Cook the soba according to the packet, rinse cold and drain thoroughly.

Heat the edamame completely and allow it to cool; slice the cucumber and spring onion.

Whisk the rice vinegar, soy sauce and sesame oil.

Gently combine everything, scatter over the sesame seeds and serve fresh.
