- 180 g tomatoes
- 140 g cucumber
- 140 g cooked white beans
- 70 g red pepper
- 40 g red onion
- 25 g walnuts
- 15 g parsley
- 20 ml lemon juice
- 10 ml pomegranate molasses
- 5 g olive oil
Step by step
Method

Cut the tomatoes, cucumber, pepper and onion into small, even dice.

Rinse and thoroughly drain the beans; roughly chop the walnuts.

Whisk the lemon juice, pomegranate molasses and oil.

Gently combine the vegetables, beans and parsley.

Fold in the dressing just before serving and scatter over the walnuts so they stay crisp.
