- 250 g cauliflower
- 170 g cooked chickpeas
- 80 g baby spinach
- 100 g cucumber
- 100 g low-fat plain yoghurt
- 15 g tahini
- 15 g dukkah spice blend
- 20 ml lemon juice
- 5 g rapeseed oil

Method

Preheat the oven to 210°C conventional.

Divide the cauliflower into small florets, rinse the chickpeas and spread both on a tray with the oil.

Roast for 22–25 minutes, turning halfway.

Whisk the tahini, lemon juice, yoghurt and 2 tbsp water until smooth.

Arrange the spinach and cucumber in a bowl, add the warm vegetables, drizzle with dressing and scatter over the dukkah last.
