- 150 g salmon fillet
- 170 g cooked beluga lentils
- 150 g cooked beetroot
- 80 g baby spinach
- 80 g cucumber
- 100 g plain skyr
- 15 ml lemon juice
- 10 g horseradish
- 10 g dill

Method

Rinse, drain and thoroughly heat the lentils, then allow them to cool until warm.

Pat the salmon dry and cook it in a non-stick pan for 3–4 minutes per side until opaque throughout.

Cut the beetroot and cucumber separately to limit staining.

Mix the skyr with lemon juice, horseradish and dill.

Arrange the spinach, lentils, cucumber and beetroot, add the cooked salmon and serve the dressing separately.
